Achill Oysters, (Crassostrea Gigas), are indeed Pacific Rock Oysters. They exclusively consume nutrients from the Atlantic Ocean, drawing their sustenance from the pristine, Class A certified waters along Ireland’s western coastline. Their habitat is a sandy bay situated above a submerged peat bog of ancient origins, which imparts a distinctive flavour to these oysters.

Colchester Rock Oysters are free-range, thriving naturally on the seabed, unconfined by nets or cages. It’s widely acknowledged that this freedom is a key factor in their reputation as some of the finest oysters globally. Their unique taste is a testament to the nutrient-rich waters of Pyefleet Creek. Harvested by dredging or handpicking at low tide, these oysters undergo a purification process in custom-designed tanks at the Fishery, using fresh, purified seawater, guaranteeing their perfect condition.
